  • Sweet Potato Biscuits

    I recently found a church cookbook at a yard sale while I was vacationing and couldn’t wait to get home to try many of the recipes I found therein.  My favorite thus far is the recipe I am sharing today.  Mrs. Flannery submitted it and let me tell you, she knows how to create!  I love sweet potatoes and since they are a great way to naturally fight my high blood pressure, I try to eat them a few times a week.  Not sure this is how I should be enjoying them–covered in butter and brown sugar–but I did anyway!

    Ingredients:

    1 1/4 c. all purpose flour
    1 Tbsp. baking powder
    2 tsp. brown sugar
    1/2 tsp. salt
    1/3 c. shortening
    1 egg, beaten
    1/2 c. mashed cooked sweet potatoes
    2 Tbsp. milk

    Preheat oven to 425.   In mixing bowl, stir together flour, baking powder brown sugar and salt.  Cut in shortening until mixture resembles coarse crumbs.  In separate bowl, combine egg, sweet potatoes and milk.  Add to dry mixture and stir just enough so that the ingredients cling together.  Knead (stopping yelling at me for making you knead.  Your grandmother will be proud of you!) on lightly floured surface, about 10 to 15 strokes.  Roll dough to 1/2 inch thickness and cut with a biscuit cutter (2 1/2 inch), dipping in flour between each cut.  Repeat rolling and cutting until all dough is used.  Place biscuits on ungreased cookie sheet and bake for 10-12 minutes.

    I served these with honey, butter and a small salt dip full of brown sugar.  I loved them and would serve also at brunch.  They also make a great gift for a new neighbor, newborn baby’s family, or a sick loved one.

    By the way, I find some of my most favorite cookbooks at yard sales and flea markets.  Next time you see one, don’t just keep driving.  Stop and see if you find a kitchen treasure!

  • Harvest Potatoes

    We have come to the last day of the tribute to the recipes of Mom.  I am hopping on a train today to go spend the weekend with her and celebrate her special day.

    I leave you (before I throw a few things in my bag) with her harvest potatoes.  It’s a perfect compliment to a Sunday brunch or a potluck meal at the office/church/bridge club.  It also carries the title of easy because if we have learned one thing this week, Mom does not do complicated.

    Ingredients:

    2 lbs. (32 oz.) frozen hash browns
    1 c. melted butter divided
    1 tsp. salt
    1/4 tsp. pepper
    1/2 c. chopped onions
    1 can cream of potato soup
    1 pint sour cream
    10 oz. shredded cheddar cheese
    2 c. crushed corn flakes

    Preheat oven to 350.  Mix everything but 1/2 c. butter and corn flakes together well.  Put into sprayed baking dish.  Mix together remaining 1/2 c. butter and corn flakes.  Sprinkle over top of dish.  Bake for 1 hour.

  • Apple Coffee Cake

    Not a mac but another version of a delicious apple! Nothing beats fresh, warm pastries during a weekend breakfast.  The aroma lingers all day in your home, your tummy enjoys the fruits of your labor, and there are usually leftovers for the work week!  I enjoy coffee cake and pretend like it’s a breakfast food and not a sweet.  Hee hee.  This recipe has fruit in it so it surely is healthy, right?

    Ingredients:

    4 medium apples, sliced
    1 1/2 c. plus 4 Tbsp. sugar
    2 tsp. cinnamon
    3 c. flour
    3 tsp. baking powder
    pinch of salt
    1 c. vegetable oil
    1/2 c. OJ
    4 eggs

    3 tsp. vanilla

    Preheat oven to 325.  Combine apples, 4 Tbsp. and cinnamon; set aside.  Sift together flour, baking powder, salt and remaining sugar.  Combine with oil, juice, eggs, and vanilla; beat for 5 minutes.  Put one half of batter in a large tube pan.  Add apple mixture and cover with remaining batter.

    Topping:

    1/8 lb. butter
    8 Tbsp. flour
    4 Tbsp. sugar
    1 tsp. cinnamon

    Combine all ingredients.  Spread over batter.  Bake for 1 hour.

    Make sure you have a pretty plate on which to display your work.  This comes out looking pretty and inviting.
