<p>I don&#8217;t know about your family but in mine, most people in mine are not big fans of cucumbers.  I never knew of an appreciation for cucumbers until I started nibbling away at the cucumber salad at my <a href="http://www.katsu-yagroup.com/" target="_blank">favorite sushi restaurant</a>.  Because of that, I now seek out and try most recipes with cucumber!</p>
<p>This one calls for crab, something I cannot have, but I made a few where I substitute the crab for some fresh grated Parmesan cheese.</p>
<p><strong><span style="font-size: x-small;">Ingredients: <span> </span></p>
<p>2 large cucumber, English or regular size unpeeled<br />
1/4 c. celery diced finely<br />
1/4 c. cooked fresh lobster or crab finely chopped<br />
1 tsp. fresh lime zest<br />
1 tsp. fresh lime juice<br />
3 tsp. green onion sliced thinly<br />
1 1/2 Tbsp. extra-virgin olive oil<br />
salt &amp; pepper to taste<br />
celery leaves for garnish</p>
<p>Cut cucumber crosswise into 1&#8243; pieces. With cut side down cut a small amount off each side angling the knife slightly toward the center leaving a small amount of dark green peel on each corner.  You are creating a cone-like shape.  Scoop out centers with a melon baller making a cup, leave a 1/4&#8243; wall on all sides.</p>
<p>Combine celery, lobster or crab, lime zest, lime juice, onion, olive oil, salt and pepper. Lightly salt each cucumber cup, fill with vegetable <span>appetizer</span>, garnish with celery leaves and indulge! </span></strong><br />
