Mmmmmm. Bacon. What could be better than bacon than breaded bacon? Breaded bacon you make in the oven! I love this dish for an alternative to breakfast bacon but it’s also really delicious tossed in your mealtime salad. I have yet to put it on a club sandwich but somehow I think it would be a success. Maybe you try it this week on your club and let me know?
12 thick slices bacon
1 large egg
1 Tbsp. water
1 tsp. Dijon mustard
1 tsp. Worcestershire sauce
1 c. fine dry bread crumbs
Preheat oven to 400. Place bacon slices in a single layer on a baking sheet with a rim. Bake for 10 minutes. Drain off fat.
In a large shallow bowl, whisk egg with water. Add mustard and Worcestershire sauce and mix well. Place crumbs on a piece of waxed paper. Remove bacon from baking sheet and coat each piece on both sides with egg mixture, then in crumbs. Return to baking sheet and bake until crisp, about 15 minutes. Drain on a paper towel and serve immediately.
I know this is decadent but sometimes I make this and just eat it as a snack. It’s that good. Dip in some horseradish mustard and it’s a perfect snack. Enjoy!
