Perfect Pancakes
Do you have small people in your house? Are you searching for a special surprise for your wife on Mother’s Day? While in Philadelphia recently, I discovered a cookbook called Kids Can Cook by Nicola Graimes with many simple and delicious recipes for your children. Mother’s Day is a perfect day to surprise Mom with breakfast in bed with these delicious pancakes and your children will swoon with pride in the kitchen.
Ingredients:
1 c. flour
2 Tbsp. sugar
1 large egg, slightly beaten
3/4 c. milk
3 Tbsp. plain yogurt, plus extra to serve
2 Tbsp. unsalted butter
10 oz. mixed berries
maple syrup, to serve
Sift the flour into a mixing bowl. Stir in sugar and make a dip in the center. Mix together egg and milk in a pitcher. Pour the milk mixture into the flour. Add the yogurt and stir with a wooden spoon until you have a smooth batter. Melt a quarter of the butter in a skillet. Add 3 spoonfuls of batter to make 3 pancakes, each about 2 1/2 inch in diameter. Cook for 2 minutes, until bubbles appear on the top of the pancake and the underneath is golden. Flip each pancake over and cook for another minute. Repeat with the remaining batter. Add a little more butter when the skillet looks dry while you are making the remaining pancakes. Serve the pancakes with a large spoonful of fruit and yogurt. Drizzle all with maple syrup.
