Chocolate Covered Strawberries
This Valentine’s Day staple is one of my mom’s favorites. I love sending her a box of these heavenly treats just because. For years I always thought they were very tough to make and something only the pro’s should tackle but like most things in life, I got curious. I got just curious enough to see if I could make them at home and guess what? I could, I did and it was not hard. It was a very proud moment as I stood there dipping my strawberries into the chocolate and then later drizzling some white chocolate on top. I did it and you can too. This recipe makes a very thoughtful, not to mention delicious, St. Valentine’s gift.
Ingredients:
8 oz. semisweet chocolate, finely chopped
1 lb. large strawberries (with stems when possible), washed and dried very well
4 oz. white chocolate, finely chopped
Place semisweet chocolate in top of double boiler with simmering water in the bottom pan. Stir constantly until melted, just a few minutes. Remove from heat. Line a baking sheet with wax paper. Grab a strawberry by the stem and dip in chocolate, coating it thoroughly. Place on wax paper. Repeat until all strawberries are dipped.
Place white chocolate in top of double boiler with simmering water in the bottom pan and stir until melted. With a small spoon, drizzle white chocolate over dark in the pattern of your choice. I like making dots. Chill in refrigerator for at least 20 minutes to allow setting. Enjoy!
