Scalloped Oysters
Many foods hold aphrodisiac properties that could come in handy on St. Valentine’s Day. One said food is the oyster and you happen to be in luck because February has an “R” in it. I have been taught for many, many years that one can only obtain the freshest, tastiest oysters in months that are spelled with an R. With all this oyster knowledge, what better to make Sunday night for your loved one but some scalloped oysters?
Ingredients:
4 c. soda cracker crumbs, unsalted
2 pints select oysters
1/4 lb. butter
1 tsp. salt
1 pint cream
1 Tbsp. minced parsley
1/4 tsp. pepper
2 tsp. Worcestershire sauce
Preheat oven to 350. Crush crackers into coarse, large crumbs. Put half into casserole dish. Drain oysters, reserving the liquid for later. Spread half of oysters over cracker crumbs. Sprinkle with pepper and half the salt. Divide remaining crumbs into half. Spread half over oysters. Cover with remaining pepper and salt and then the remaining crumbs. Combine oyster liquid, cream and Worcestershire sauce and pour over. Dot with butter and sprinkle with minced parsley. Cover and bake for 40 minutes while uncovering for last 5 minutes.
Serve this along with the other foods on the aphrodisiac list and you could be in big trouble.
