Cider Ham

This is my roasting pan.This is a perfect match for yesterday’s post of Orange Biscuits.  The recipe adds another heavenly fruit flavor that will fill your home with a lovely aroma.  I find it to be a simple recipe that you can make for the Christmas Eve meal and have plenty of leftovers for sandwiches on Christmas day.

It’s also a great addition to brunch.  In my family, mom makes a great brunch for the family to enjoy after presents.  We then, like many families, graze all day on the leftovers.  This is a perfect all day grazing dish.

Ingredients:

12 lb. cooked ham
2 c. apple cider
1 stick cinnamon
1 tsp. whole cloves
1/2 tsp. allspice
1/2 c. brown sugar
1/2 c. honey

Preheat oven to 325.  Place ham in a shallow roasting pan.  Combine cider, cinnamon, cloves and allspice in a saucepan and heat to boiling.  Cover and simmer for 5 minutes.  Pour over ham.  Bake uncovered, basting every 30 minutes for at least 3 hours.

Remove ham from oven.  Increase oven temp to 400.  Carve diagonal lines in fat with the tip of a knife to form diamond shapes.  Do not cut into meat!  You are piercing the fat.  Put a clove in each point of diamond.  Combine brown sugar and honey in a saucepan.  Cook over low heat stirring constantly until sugar is melted.  Brush over top of ham.  Return ham to oven and bake for 30 minutes, brushing every 10 minutes with honey mixture.  Once meat thermometer reaches 160, your feast is right around the corner.  Let the ham sit for 20 minutes before slicing.

Now I know you are thinking, “Amy.  This is a good bit of work, and you said it was simple.”  It is simple in that the directions and the few steps to make are simple ones.  Your family and loved ones are worth it.  And it tastes heavenly.
