Orange Biscuits

He is a ham-burglar.Oh my it’s close to Christmas.  It’s snowing furiously here in NYC and my LA body is in shock!  I woke this morning thinking about the Christmas feast and what would be served in each of your homes.  Many of you do what my Grandma Jo used to do–both ham and turkey as the center of the meal.  If you are having ham, add these biscuits to your menu!  You will not be disappointed.  They are very easy to make and require just a bit of prep.  Assign this to whomever is the -in-law of the group.

Ingredients:

1/2 c. orange juice
3/4 c. sugar, divided
1/4 c. butter, unsalted
2 tsp. orange zest
2 c. all-purpose flour
1 Tbsp. baking powder
1/2 tsp. salt
1/4 c. shortening
3/4 c. milk
1/2 c. butter, melted
1/2 tsp. cinnamon

Preheat oven to 450.  Combine OJ, 1/2 c. sugar, butter and orange zest in a medium saucepan.  Cook while stirring for 2 minutes.  Fill 12 ungreased muffin tins about 2/3 full with OJ mixture.

Sift together flour, baking powder and asalt in large bowl.  Cut in shortening until mixture resembles a crumb texture.  Stir in milk and mix with a fork until mixture forms a ball.  Lightly flour the space you will be working on and knead dough for one minute.  Roll in to a 9 inch square about 1/2 inch thick.  Brush roll with melted butter.  Combine cinnamon with remaining sugar and sprinkle on top of butter.  Roll up and cut into 12 equal slices.  Put slices cute side down over orange mixture that is sitting in those muffin tins.  Bake for 15 minutes.  Cool, remove and eat ‘em up!

The citrus flavor is a lovely accompaniment to ham.  Or you can make these as a breakfast biscuit to serve with a marmalade. Enjoy!
