Apricot & Brie Dip

He loves brie dip.Most of you will either host or attend a get together this holiday season.  Many will have family into their homes for a celebration.  I host an annual girls get together at my home and test all sorts of Hey Amy! recipes on my girl friends.

On top of everything else that is happening during the month, entertaining and cooking sometimes take a back seat to the present shopping, decorating and special event attending.  I hope you will find easy and simple recipes here to make for those occasions.  This recipe is perfect to take to a friends or delight in at home.

Ingredients:

1/2 c. dried apricots, finely chopped
1/3 c. plus 1 Tbsp. apricot preserves, divided
1/4 c. apple juice
1- 2 lb. brie, rind removed and cut into cubes
crudite, crackers, nuts or bread to dip

Combine 1/3 apricots, preserves and apple juice in slow cooker.  Cover and cook on high for 40 minutes.  Stir in brie and cook 30 to 40 minutes until melted.  Stir in remaining preserves.  Turn cooker to low and serve.

Easy to make and to transport gives this recipe an edge in your busy day.  Make some tonight for your family!
