Meatless Sloppy Joes
Never wanting a week to pass without a delicious and healthy vegetarian recipe, today I am sharing a meatless Sloppy Joe. I love making this for football Sunday or game night. It’s prepared in the slow cooker so your guests can help themselves throughout the day or evening. I also made if for the packing party when I was moving so my friends could grab a bite to eat when they were hungry. You can play with the seasonings to make it more sweet or spicy. I like to!
Ingredients:
2 c. thinly sliced red onions
2 c. chopped green bell peppers (as I am allergic, I substitute for yellow onions)
1 can kidney beans, drained and mashed
1 can tomato sauce
2 Tbsp. ketchup
1 Tbsp. yellow mustard (play around with spicy or honey)
2 cloves garlic, finely chopped
Combine all ingredients in slow cooker. Cover and cook on low for 5 hours. Enjoy!
Don’t tell your friends it’s vegetarian if they are hesitant to try something deemed healthy. I have surprised so many people with this recipe and have even converted a few to make it instead of traditional Sloppy Joes.
