Apple Pie Bread Pudding
I have tried for the last few weeks to give you alternatives to the traditional dishes of Thanksgiving. Don’t get me wrong, I love the traditional meal but some years it is a treat for you and your guests to mix it up a bit. You get to create new dishes and your guests are delighted to new flavors!
This recipe combines two of my traditional favorites–apple pie and bread pudding. I look at it as Thanksgiving comfort food.
Ingredients:
3 eggs, beaten
1 c. applesauce
1/2 c. vanilla yogurt
1/2 c. sugar
3/4 c. brown sugar, divided
1/2 c. long cooking oats, uncooked
1 tsp. cinnamon
3 c. bread, cubed (day old is best)
2 apples, peeled, cored and chopped
9 inch pie crust, unbaked
1/4 c. flour
2 Tbsp. butter
Preheat oven to 350. Combine eggs, applesauce, yogurt, sugar, 1/2 c. brown sugar, oats and cinnamon. Add bread and apples. Spoon mixture into pie crust. Blend together remaining brown sugar and flour; cut in butter until mixture is crumbly. Sprinkle over pie filling. Bake for one hour until top is golden brown. Enjoy!
If you don’t know how to make a homemade pie crust, I think the best recipe is on the back of the Crisco can. Or you can cheat and buy a Pillsbury pie crust in your grocer’s refrigerated section (do I sound like a commercial…geez).
