Apple Cranberry Crisp

Cranberry bogs blow my mind.  Look at this!If you have kids, you will either be at a party or out trick or treating Saturday night.  For most of you, it will be a chilly evening to be out walking the streets collecting sweet treats.  I don’t have children but have spent many chilly evenings out with friends and their children trick or treating and always enjoy coming home to something warm.  Hot coffee/tea/cocoa is a must but a sweet treat for the adults is a bonus.  Here is a great recipe to make before you go out.

Ingredients:

6 oz. sweetened dried cranberries
2-20 oz. apple pie filling
2 tsp. ground cinnamon
1/2 c. chopped walnuts
2/3 c. all-purpose flour
1/2 c. brown sugar
1/4 c. unsalted butter, softened
fresh mint

Preheat oven to 375.  Combine the cranberries, apple filling, cinnamon and walnuts well in a bowl.  Spoon into an 8 x 8 glass dish.  Combine the flour and brown sugar in a bowl and mix well.  Cut in the butter until mixture is crumbly.  Sprinkle over apple filling in the dish.  Bake for 30 to 35 minutes until the filling is bubbling and topping is browning.  Garnish with mint (this is optional but makes for a great flavor!)

You can microwave it for a few seconds to warm it when you return home.  If it’s not too chilly outside, serve it a la mode!  Don’t forget the grownups on this spooky night.  We deserve something sweet as well!
