Apple Cobbler

Elvis loves potluck! Now that fall is here and apples are in season, I am excited to bake a yummy cobbler.  I enjoy this dish as a complete meal; sometimes, on my own with a giant spoon.  It’s perfect for breakfast or brunch.  Of course it makes a nice ending as well.  None of your guests, family or friends will turn it down!  I like taking this to a potluck meal as it’s always a crowd pleaser.  If you have arrived here early enough in the day, go grab some Granny Smith’s and make this this afternoon.

Ingredients:

1/3 c. unbleached all-purpose flour
1/3 c. oat flour
1/3 c. oat bran
1/3 c. + 3 Tbsp. brown sugar
2 tsp. baking powder
1 tsp. baking soda
3/4 c. buttermilk
1 Tbsp. maple syrup
2 tsp. ground cinnamon

1 tsp. vanilla extract
4 medium baking apples (I always use Granny Smith because Nany said so)

Preheat oven to 375.  In a large mixing bowl, combine the 2 flours, oat bran, 1/3 c. brown sugar, baking powder and soda.  Stir to blend.  Add buttermilk, stirring just enough to blend.  Set aside.  In another bowl, mix remaining brown sugar, maple syrup, cinnamon and vanilla.  Add apples and toss well to completely coat.

Lightly grease an 8-inch baking dish.  Put apple mixture in pan.  Spread the batter over it.  Bake until golden brown and bubbly, about 40 minutes.  If the top starts to brown too fast, cover very loosely with foil and turn down the heat to 350.

This is a very easy recipe so even those who are not strong in the kitchen, can have an impressive dish!  Get in your kitchen.
