I Scream!

Ice cream and cake! Do the ice cream and cake! Well, the hills of Los Angeles are burning.  Terribly.  We are in our 8th or 9th day of record heat with fires burning all over the county.  In my efforts to ignore the heat and the ash trickling down from the sky, let’s talk about making ice cream treats–something that would certainly cool off the hottest of days.  These treats are a great ending to a fun BBQ.  Pick a few to make, add an ice cream sundae area and you are complete!

Nectar Dream:

2 c. whole fruit peach nectar
a few drops vanilla extract
scoops of coffee ice cream
ginger ale

Grab 4 tall glasses and divide nectar mixed with vanilla extract in each.  Add scoops of ice cream and fill each glass with ginger ale.  Serve.

Goober Special:

1/4 c. peanut butter
2 Tbsp. granulated sugar
1/4 tsp. vanilla extract
1 c. cold milk
scoops vanilla ice cream
ginger ale

Combine peanut butter, sugar, and vanilla extract.  Slowly stir in milk and beat until smooth.  Divide among 3 tall glasses.  Add scoop vanilla ice cream and fill with ginger ale.

Lemon Zip:

8 Tbsp. frozen lemonade concentrate
8 scoops vanilla, pineapple or raspberry sherbet/ice cream
sparkling water

In 8 tall glasses add frozen lemonade.  Fill halfway with sparkling water.  Add scoop of ice cream/sherbet.  Fill to top with remaining sparkling water.

Fruit Frost:

1 c. orange juice
1/2 c. lime juice
1/4 c. lemon juice
1 c. pineapple juice
2/3 c. granulated sugar
1 pint vanilla ice cream

Mix juices with sugar; add ice cream and beat until just blended.  Serve in tall glasses with slices of lemon, orange, lime or pineapple.

Obviously if you are entertaining a large group you will need to triple or quadruple these recipes.  If you don’t want them to be dessert, make a few of them and place on a gorgeous tray.  Great your guests with these refreshing drinks as they arrive.  Nothing is like the first impression!
