Hey Amy!

Today would have been Michael’s 51st birthday.  I learned of his love of fried chicken when Magic Johnson told his personal story of time spent with Michael at his memorial service.  Although there was not a dry eye in the house throughout the bulk of that service, I along with the other people there, enjoyed this story and had a great laugh when it was told.  Happy Birthday MJ!  Here is a great southern fried chicken recipe in honor of you.

Ingredients:

2 1/2 lbs. chicken pieces
1 egg
3/4 c. evaporated milk
1 tsp. salt
1 c. flour
pepper

Blend ingredients other than chicken well.  Dip chicken in batter.  In heavy skillet, heat at least 2 inches of shortening until very hot.  Add chicken, largest pieces first, and brown on both sides about 25 minutes.
