Cajun Roasted Chickpeas
A very dear friend said to me over lunch “I love your twitter messages because everything always sounds so yum but I can’t eat most of it.” He, like me, cannot eat a lot of the things most people consume every day. He lives gluten free, dairy free and two other frees that I can’t recall right now. Guess I am the bad friend, huh? Anyway, today’s posting is for you O. Enjoy. 
Ingredients:
1 can (15 oz.) chickpeas, rinsed and drained
1 Tbsp. olive oil
1 1/2 tsp. Cajun seasoning
Preheat oven to 400. In a medium bowl, toss the chickpeas with oil and seasoning. Spread in a single layer on a baking sheet. Bake, shaking occasionally, until golden, about 35 minutes. Let cool before serving. cover and keep at room temperature for up to 3 days.
Eat these peas as you would pretzels or nuts. It’s a nice change and very unexpected in the snack dish. And besides, O loves chickpeas. Get in your kitchen.
