Crispy Potato Cakes

I love the flavor of this small bite recipe.  As we continue our journey of delicious ‘small bites’, I am sharing this.  It’s simple, easy to create and impressive to guests when you serve.  For this recipe you will need wax paper and two small muffin pans.

Don't think of it as cheese from a goat.  Ingredients:

3 fingerling potatoes, washed and thinly sliced with a mandolin
bunch of fresh thyme
5 oz. goat’s cheese

Preheat oven to 350.  Generously grease inside of small muffin pan.  Place a spring of thyme in the bottom of each.  Add a potato slice.  Then add a small glob of goat cheese.  Alternate between potato slice and goat cheese glob until you have a small stack.  Place a piece of waxed paper over the muffin pan and place second muffin pan on top, so that they nestle.  Press down firmly and bake for 30 minutes, until the potatoes are browned.  Tip upside down and allow to ease out onto plate.  Cool for a minute before you serve.

You can substitute any soft cheese for goat if you do not care for goat.  I myself am a fiend for goat so I can’t think of a better way to create this delightful recipe.  Have you made the acquaintance of your kitchen lately?  Let’s all make one thing at home this week!  You can do it.
