Mini Open Face Chicken

Miracle Whip.  Wonder why they named it a miracle?More, more and more small bite food.  Are you enjoying these recipes as much as I am?

I love those mini party loaves of rye and pumpernickel.  I want to make mini grilled cheese sandwiches every time I see them.  This recipe comes from a cooking pamphlet (you know those thin gatherings of recipes at the market check out stand) that was published in 1989.   It’s not as old as most of the recipes you will find here but it’s so yummy, I had to share.  Every recipe from the pamphlet contains my “child of the 70′s” favorite–Miracle Whip.  This is a very easy recipe to whip up.

Ingredients:

1 1/2 c. finely chopped cooked chicken breast
1 c. Miracle Whip
1/2 c. chopped green chillies
3/4 c. sharp cheddar cheese
1/4 c. finely chopped onion
36 party rye or pumpernickel bread slices

Combine chicken, salad dressing, chilies, cheese and onions; mix lightly.  Cover bread with chicken mixture.  Broil 5 minutes or until lightly browned.  Serve hot.  Garnish with parsley or some chillies or a radish or whatever you think looks saucy!  Create your mini masterpiece.

You can make these for a cocktail party, a meal, tea, a snack.  I cut the recipe in half and make them as a meal for two of us.  More like an all evening grazing party for two but, hey, it works!
