Hawaiian Burgers
No, I did not go to Hawaii on vacation but I did enjoy a lot of yummy burgers on the grill. A burger on the grill just plain tastes better. I am not sure why but I think it could be the smell of fresh cut grass from the backyard. Or maybe its the scent of the rain when a late day storm happens upon you quickly and you are standing on the patio flipping burgers getting drenched. Or if you are a city girl, it could be the sound of the sizzle, pushing the sounds of the city out of your mind for just a fleeting moment.
My sister-in-law, Tricia, taught me a great burger lesson while I was home. She shared that if you make a small dip in the center of the burger, it will cook more evenly and you will not be tempted to squish the burger with your spatula, thus getting rid of all the juices. I believed her of course but I was not prepared for thee most juiciest of juicy burger. Wow. Now many of you may already have this tip in your arsenal but I had to share, just in case you didn’t know. Now you know.
This burger comes from a cookbook of burgers. I love fresh pineapple so this is one of my favorites. It’s Friday so fire up the grill and treat yourself to a delicious burger.
Ingredients:
1 1/2 lb. ground beef (80/20 fat I believe make the best burgers)
1/3 c. chopped green onions
2 Tbsp. Worcestershire sauce
1/8 tsp. black pepper
1/3 c. pineapple preserves
1/3 c. BBQ sauce
6 pineapple slices
6 buns, toasted
Combine beef, onions, Worcestershire and pepper in a large bowl. Shape into six 1/2 inch thick patties. Combine preserves and BBQ sauce n small saucepan. Bring to a boil over medium heat, stirring often. Place patties on grill directly above medium heat. Grill covered, 8 to 10 minutes to medium, turning and brushing often with the sauce. Place pineapple on grill and cook for a minute until browned, turning once. To serve, place patties on buns and top with pineapple. Makes 6 burgers.
Remember you can always substitute beef for ground turkey or chicken or soy meat.
