Garnet v. Eggs
My brother loves deviled eggs. We have established that, clearly. When a plate of eggs is presented at any family event, Garnet must restrain himself from eating the entire plate. Not kidding. I found this recipe recently and wondered how my brother would do with shrimp inside those eggs? Somehow I think Garnet would win again, devouring all in one sitting. As you know, I can’t speak for this recipe as I can for the rest who live on this site but those who have made these, love them. Make a dozen or two for your guests. They won’t be disappointed.
Ingredients:
4 hard-cooked eggs, peeled
4 Tbsp. mayo
2 oz. peeled shrimp, chopped
salt
cayenne pepper
lemon juice
Slice the eggs in half lengthwise and hollow out the yolks, placing them in a bowl. Set the egg whites aside. Add the mayo to the bowl and using a fork, smash the yolks and shrimp until combined well. Add salt, cayenne and lemon juice to suit your taste. Scoop the shrimp mixture into egg whites to a healthy mound. Serve on a bed of lettuce leaves or with a few whole shrimp as garnish. Fight your brother to have some.
This recipe is a great addition to a cocktail party, afternoon tea or a picnic. Enjoy!
