Apple Coffee Cake
Nothing beats fresh, warm pastries during a weekend breakfast. The aroma lingers all day in your home, your tummy enjoys the fruits of your labor, and there are usually leftovers for the work week! I enjoy coffee cake and pretend like it’s a breakfast food and not a sweet. Hee hee. This recipe has fruit in it so it surely is healthy, right?
Ingredients:
4 medium apples, sliced
1 1/2 c. plus 4 Tbsp. sugar
2 tsp. cinnamon
3 c. flour
3 tsp. baking powder
pinch of salt
1 c. vegetable oil
1/2 c. OJ
4 eggs
3 tsp. vanilla
Preheat oven to 325. Combine apples, 4 Tbsp. and cinnamon; set aside. Sift together flour, baking powder, salt and remaining sugar. Combine with oil, juice, eggs, and vanilla; beat for 5 minutes. Put one half of batter in a large tube pan. Add apple mixture and cover with remaining batter.
Topping:
1/8 lb. butter
8 Tbsp. flour
4 Tbsp. sugar
1 tsp. cinnamon
Combine all ingredients. Spread over batter. Bake for 1 hour.
Make sure you have a pretty plate on which to display your work. This comes out looking pretty and inviting.
