Shhhhhhh!

The other hush puppy.I enjoy hush puppies with a great fish fry.  My guy loves hush puppies with catfish nuggets from the House of Blues and we tend to find ourselves going to shows just for the dinner before.

This recipe is from a cookbook from a hometown mill.  They called it the Cornmeal Collection and it a grouping of cornmeal recipes from their family as well as ones they have discovered throughout the country.  This recipe is from 1949.

Ingredients:

3 c. cornmeal
1 c. flour
1/4 tsp. salt for each cup
2 tsp. baking powder
1 medium onion finely chopped, for each cup of dry ingredients
enough sweet milk to make batter about as stiff as putty

When thoroughly mixed, drop from spoon into very hot deep fat in which fish has been fried.  Beer can be substituted for milk; if so delete baking powder.  Serve with catfish .

Enjoy the language of this recipe as I do.  It speaks to the time period and the thought process behind baking and cooking.
