Okay. Okay. The Cheese Ball.

Caramel sends this treat over the top! Those of you who have been in my home have been very patient to receive this recipe.  I thought to share it with you on a special day–my birthday–but I was caught up in that damn day job that week and unfortunately, I was a bit silent.  So here I sit, on an overcast Saturday morning thinking, what shall I share today?  The answer was obvious to me.  Ladies & Gentlemen, I present the cheese ball to end all cheese balls.

Ingredients:

8 oz. cream cheese
1/3 c. brown sugar
finely chopped pecans
caramel ice cream topping
3 apples, sliced

Set cream cheese on the counter until it gets soft.  Blend cream cheese and brown sugar. Form into ball and roll in pecans (I buy whole pecans and put them in a ziploc bag.  Then I roll over them with a rolling pin to get them as fine as they can be).  Set ball on serving dish and pour the caramel over it.  Serve with apple slices arranged around the base.  Over indulge.

I usually make three or four of these when I am having 15–20 people over.  It is that good.  Right Leo?
