Veggie Baked Beans

I have tried countless recipes in search of a delicious, flavorful baked bean recipe without pork.  The other half doesn’t dine on swine and I love baked beans so the hunt was on.  Making baked beans from scratch isn’t as hard as you think and it’s worth the extra love.  Your family, loved ones, guests will be very impressed when you share.Baked Beans!

Ingredients:

1 lb. small white beans, soaked for 24 hours
2 onions, each stuck with several cloves
1/2 c. dark brown sugar
2 Tbsp molasses
2 tsp dry mustard
1 tsp salt
pepper
salt & liquid smoke to taste

Preheat oven to 250.  Cook the beans in unsalted water for 1 hour (at a soft boil).  Use enough water so the beans can toss comfortably in the pot.  Drain and reserve the liquid.  Grab a heavy casserole with a lid and place the onions at the bottom.  Cover with the beans.

Mix the sugar, molasses, mustard, salt, liquid smoke and a good amount of black pepper (take it to the level of pepper you like in dishes) with 1 cup of the bean liquid.  Pour over the beans, mix gently and cover the casserole.

Bake for at least 3 hours adding more of the bean liquid if beans start to dry.
