Luck o’ the Irish

Nothing is quite like sipping Bailey’s Irish Cream, neat.  I feel distinguished, mature, and as if I know something others do not.  Don’t ask why. Not sure myself. Bailey's

I enjoy incorporating any flavor I love into as many dishes as possible.  Let’s see the few ways I can suggest you use  this fine liqueur in this St. Patrick’s Day post.

  1. Hot Cocoa.  Stir a shot into 2 Tbsp of Hershey’s cocoa.  Once the powder has dissolved, add warm milk.  Top with the fakest of foods–Jet Puffed Marshmallow Creme.  Sinful.
  2. Coffee.  Bailey’s and Coffee is the best way to get your drink on secretly.  Who needs to know that morning coffee has a shot in it?  Great way to start a Saturday.
  3. Ice Cream.  Pour it over chocolate, chocolate mint, french vanilla, peanut butter, any flavor actually.  Put the scoop with Bailey’s on it back into the freezer for five minutes to seal the flavors in the cool temperature.
  4. Frosting.  Substitute the Bailey’s for milk in any homemade vanilla frosting recipe.  Yum.
  5. Mashed Potatoes.  When mashing the potatoes, add a shot of Bailey’s in with the milk and butter.  Dynamic flavor.
  6. Cheesecake.  My favorite recipe is here.
  7. Mousse.  Separate two eggs.  Beat egg whites until stiff.  Beat in 1/4 cup sugar and set aside.  Whip 1 pint heavy whipping cream, 1/4 cup sugar and 1 tsp Bailey’s until thick.  Fold in egg whites and spoon into parfait cups.  Refrigerate until ready to serve.
  8. Pound Cake.  Substitute lemon flavor or vanilla flavor for equal amounts of Bailey’s in your favorite pound cake recipe.
  9. Stuff the mousse inside the pound cake!  Whoo!
  10. Cookies.  Cream 1 cup butter with 1 1/2 cup sugar.   Add 1/2 cup Bailey’s, 1 tspn vanilla, 1 egg, 1 egg yoke and blend.  Add 4 cup flour, 1/2 tsp salt and 2 tsp baking powder.  Knead with hands until well blended.   Like all cookie dough, pop it in the fridge overnight.  Roll out and cut into shapes.  Mess with your friends minds and use all the other holiday cookie cutters in your drawer.  Make some lively conversation over your cookie shapes.  No one will expect it.  Bake 8 minutes on cookie sheet lined with parchment paper.
  11. Meat.  Do you use whiskey as a marinade?  Why not substitute Bailey’s next time?

Here’s the thing.  If you can imagine it to taste delicious, it probably will.  Experiment.  And yes, I was sipping my Bailey’s Irish Cream, neat while writing this tonight.  Happy St. Patrick’s Day!
