Candied Nuts

If you are having a cocktail party, in need of hors d’oeuvres, or just laying by the pool with your girlfriends and need something sweet and lots of it, candied nuts of any kind are delightful. I prefer cashews but you can candy just about any nut as long as its raw to begin with.
Ingredients:
4 cups raw cashews (no salt)
2 Tbsp butter (organic & unsalted)
6 Tbsp brown sugar
Pinch of thyme, basil or rosemary (optional)
In very large saute pan, toss nuts in butter until nuts are thoroughly coated. Add brown sugar and saute until brown. I have a gas stove and my cooking time is about 8 minutes over medium heat. If you want the flavor of the spice add when the nuts are brown and toss quickly. Remove from heat immediately and place on wax paper to cool. Unless you are seeking nut clusters, separate them well on the wax paper. I place mine on a wax paper covered cookie sheet. You can pop them in the fridge (or the freezer as nuts don’t freeze) to cool quickly. Enjoy!
